Amazing Benefits of Eating Broccoli.

  • Broccoli is truly a super-food! It's a rich source of antioxidants, including vitamins C, K, and A. It also contains important minerals like potassium, calcium and iron. These antioxidants help protect our body from oxidative stress ,therefore we have less inflammation.

  • Broccoli is an excellent source of fiber - which promotes gut health and helps us to feel full.

  • As a member of the cruciferous family, broccoli has anti-cancer properties, helps to lower cholesterol, maintain proper blood pressure and improve cardiovascular health.

  • Broccoli is rich in vitamin C which strengthens our immune system, promotes collagen production, wound healing and iron absorption.

Eating more vegetables is not only good for your physical health, but it can improve mental health as well.

Broccoli Salad + Lemon Dressing

Ingredients.

  • 6 cups chopped broccoli

  • 6 slices cooked bacon, chopped

  • 1/2 red onion, chopped

  • 1 green apple, chopped

  • 1/2 cup toasted sunflower seeds

  • 1/4 cup raisins


Lemon Dressing.

Ingredients.

  • 1/2 cup mayonnaise

  • 1 clove garlic, minced

  • 1 tsp. Dijon mustard

  • 1 tbsp. apple cider vinegar

  • 1/2 lemon, juice and zest

Method.

In a jar with a tight fitting lid, combine all ingredients and shake well.


To Create the Salad.

  1. In a large bowl, combine all ingredients reserving some bacon and sunflower seeds to garnish the salad.

  2. Pour lemon dressing over broccoli salad and toss until combined.

  3. Garnish with reserved bacon and sunflower seeds.

 

Notes.

For a complete meal, add sliced grilled chicken, salmon or steak.

Include cheese - Feta is delicious on this salad.

Omit sunflower seeds and add toasted pecans or walnuts.
