Radishes are so delicious when roasted. They become mellow with a midly sweet flavor and remind me of a roasted potato. Radishes are in season in the Spring, so try some this week!
2 bunches radishes [3 cups]
1 tbsp. avocado oil
1 tbsp. kosher salt
1 tbsp. black pepper
2 tbsp. ghee or butter
1 clove garlic, minced
1 lemon, zest and juice
thyme springs [optional]
Preheat oven to 425 degrees.
Wash radishes and slice off stems and tail root. Halve or quarter radishes.
Line a sheet pan with parchment paper.
Spread radishes on pan and toss with oil, salt & pepper.
Roast 20-30 minutes until browned and softened.
Melt ghee or butter in a small saucepan with minced garlic.
When radishes are done, remove from oven and pour ghee over radishes.
Sprinkle with lemon zest, lemon juice and thyme [if desired].
Serve & enjoy.
