Oven-roasted Radishes

Radishes are so delicious when roasted. They become mellow with a midly sweet flavor and remind me of a roasted potato. Radishes are in season in the Spring, so try some this week!



  • 2 bunches radishes [3 cups]

  • 1 tbsp. avocado oil

  • 1 tbsp. kosher salt

  • 1 tbsp. black pepper

  • 2 tbsp. ghee or butter

  • 1 clove garlic, minced

  • 1 lemon, zest and juice

  • thyme springs [optional]


  1. Preheat oven to 425 degrees.

  2. Wash radishes and slice off stems and tail root. Halve or quarter radishes.

  3. Line a sheet pan with parchment paper.

  4. Spread radishes on pan and toss with oil, salt & pepper.

  5. Roast 20-30 minutes until browned and softened.

  6. Melt ghee or butter in a small saucepan with minced garlic.

  7. When radishes are done, remove from oven and pour ghee over radishes.

  8. Sprinkle with lemon zest, lemon juice and thyme [if desired].

  9. Serve & enjoy.
