Breakfast Meatballs

These breakfast meatballs are a delicious combo of savory and sweet. Ground turkey or chicken, bacon, apples, onions and pantry spices are all you need. They're a perfect make-ahead addition to your breakfast, so make a big batch today!



  • 1 pound ground turkey or chicken

  • 2 tbsp. fresh rosemary, finely choped

  • 4 slices no-sugar bacon

  • 1/2 cup onion, finely chopped

  • 1 small green apple, diced

  • 1 tsp. kosher salt

  • 1 tsp. freshly ground black pepper

  • 1/2 tsp. garlic powder

  • 1/2 tsp. dried thyme

  • 2 tbsp. coconut aminos

  • 1 egg, lightly beaten


  1. Preheat oven to 400 degrees

  2. Saute bacon in a skillet until crispy, drain bacon on a paper towel and chop into small pieces.

  3. In a bowl; combine all ingredients and mix thoroughly. They will be sticky.

  4. Refrigerate mixture for 30 minutes to make it easier to create balls.

  5. Roll mixture into balls [you will make 20-24]

  6. Place balls on a parchment- lined sheet pan.

  7. Bake for 15 minutes. Check for doneness by cutting into a meatball. Cook an additional 3-5 minutes if not done.

  8. Remove from oven and enjoy.


Each meatball provides 4g protein. This recipe can easily be doubled so you can freeze a batch for later.
