These breakfast meatballs are a delicious combo of savory and sweet. Ground turkey or chicken, bacon, apples, onions and pantry spices are all you need. They're a perfect make-ahead addition to your breakfast, so make a big batch today!
Ingredients.
1 pound ground turkey or chicken
2 tbsp. fresh rosemary, finely choped
4 slices no-sugar bacon
1/2 cup onion, finely chopped
1 small green apple, diced
1 tsp. kosher salt
1 tsp. freshly ground black pepper
1/2 tsp. garlic powder
1/2 tsp. dried thyme
2 tbsp. coconut aminos
1 egg, lightly beaten
Method.
Preheat oven to 400 degrees
Saute bacon in a skillet until crispy, drain bacon on a paper towel and chop into small pieces.
In a bowl; combine all ingredients and mix thoroughly. They will be sticky.
Refrigerate mixture for 30 minutes to make it easier to create balls.
Roll mixture into balls [you will make 20-24]
Place balls on a parchment- lined sheet pan.
Bake for 15 minutes. Check for doneness by cutting into a meatball. Cook an additional 3-5 minutes if not done.
Remove from oven and enjoy.
Notes.
Each meatball provides 4g protein. This recipe can easily be doubled so you can freeze a batch for later.
