Ingredients.
6-8 Beets, washed and cut in half [remove greens and save for another use]
Olive Oil
Thyme Springs
1 Orange, cut in half
Method.
Preheat oven to 375 degrees.
Place washed and cut beets on a parchment- lined sheet pan.
Thinly slice half of the orange and place on sheet pan with beets.
Drizzle with olive oil, thyme springs and juice of the remaining half of the orange.
Season beets with salt & pepper.
Cover sheet pan with parchment and then cover with aluminum foil.
Roast for 45 minutes or until soft.
Allow beets to cool enough to handle, then rub skins off beets easily.
