Does this qualify as a bread? Maybe just call it what it really is? - A yummy and healthy treat that nourishes and satisfies.
Ingredients.
3-4 ripe bananas, mashed
4 eggs
1/4 cup coconut oil, melted and cooled
1/3 cup maple syrup or honey
1 1/2 cups almond flour
1/2 cup tapioca or arrowroot powder
1/3 cup cacao or cocoa
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup toasted pecans or walnuts, chopped
1/2 cup dark chocolate chips [I use Hu, Lily's or Bake Believe low sugar chips]
Method.
Preheat oven to 350 degrees. Line a loaf pan with parchment paper.
In a large bowl, mix together; bananas, eggs, coconut oil, maple syrup.
In another bowl, mix together; almond flour, tapioca powder, cacao, baking soda, cinnamon and salt.
Combine wet ingredients with dry ingredients. Add nuts and chocolate chips. You can reserve a few chips & nuts for top.
Pour into parchment lined loaf pan and smooth top.Sprinkle with a few nuts & chips.
Bake for 50-55 minutes, or until toothpick comes out clean.
Allow to cool for 30 minutes before removing from loaf pan.
Cut into 8 slices.
