Seriously Delicious Salmon

We all know that eating more fatty fish like salmon is a good thing. This recipe is easy and absolutely delicious!



 

Rub.

  • 1/2 tsp. garlic powder

  • 1/2 tsp. cumin

  • 1/2 tsp. smoked paprika

  • 1/2 tsp. kosher salt

  • 1 tbsp. avocado or olive oil.


Salsa.

  • 2 avocados, cut into chunks

  • 1/4 cup chopped cilantro

  • 1 lime, juiced

  • 1 clove garlic, minced

  • 1/4 tsp. red pepper flakes

  • salt & pepper


Method.

  1. Preheat oven to 425 degrees.

  2. Pat salmon dry with paper towels

  3. Place salmon on a parchment- lined sheet pan. I like to slice a lemon and put the salmon on top of the lemon slices.

  4. Combine rub ingredients in a small bowl.

  5. Brush rub over salmon.

  6. Bake for 10 minutes or until fish flakes easily.

  7. Remove salmon from oven and turn on broiler. Return salmon to oven and broil 1-2 minutes until top is browned.

  8. Make the salsa by combining avocados, cilantro, garlic, lime juice, red pepper flakes, salt & pepper.

  9. Taste and adjust seasoning if necessary.

I love to serve this salmon on a bed of mixed greens with the avocado salsa.
