We all know that eating more fatty fish like salmon is a good thing. This recipe is easy and absolutely delicious!
Rub.
1/2 tsp. garlic powder
1/2 tsp. cumin
1/2 tsp. smoked paprika
1/2 tsp. kosher salt
1 tbsp. avocado or olive oil.
Salsa.
2 avocados, cut into chunks
1/4 cup chopped cilantro
1 lime, juiced
1 clove garlic, minced
1/4 tsp. red pepper flakes
salt & pepper
Method.
Preheat oven to 425 degrees.
Pat salmon dry with paper towels
Place salmon on a parchment- lined sheet pan. I like to slice a lemon and put the salmon on top of the lemon slices.
Combine rub ingredients in a small bowl.
Brush rub over salmon.
Bake for 10 minutes or until fish flakes easily.
Remove salmon from oven and turn on broiler. Return salmon to oven and broil 1-2 minutes until top is browned.
Make the salsa by combining avocados, cilantro, garlic, lime juice, red pepper flakes, salt & pepper.
Taste and adjust seasoning if necessary.
I love to serve this salmon on a bed of mixed greens with the avocado salsa.
