Power Balls

When the need to eat something sweet calls your name - power up with these! Packed with protein, full of healthy ingredients and they taste delicious.



 

Ingredients.

  • 1/2 cup nut butter [I use NuttZo or Once Again Cashew Butter]

  • 1/3 cup maple syrup or honey

  • 1 cup organic oats [I use One Degree Organic Foods]

  • 1/3 cup sunflower seeds

  • 2 tsp. vanilla

  • 2 tbsp. chia seeds*

  • 2 tbsp. hemp hearts*

  • 2 tbsp. flax meal*

  • 1/4 cup unsweetened toasted coconut

  • 1 - 2 tsp. cinnamon

  • 1/2 cup [chocolate chips [I use Hu, Lily's or Bake Believe]


 




Method.

  1. Add all ingredients to a food processor and pulse until mixed.

  2. Add 1-2 tbsp. water if mixture is too stiff.

  3. Roll into 16 balls.

  4. Store in refrigerator.

Notes. - These balls aren't super sweet, so feel free to increase the sweetener . Toasting the sunflower seeds and coconut really makes a difference. *You can use chia, hemp and flax or just choose one and increase the amount to 6 tablespoons.

Joy Balls - Reduce oats to 2/3 cup, add 2/3 cup toasted coconut, use almond butter, omit sunflower seeds and add 1/4 cup toasted almonds

Fall Balls - Add 1-2 tsp. pumpkin pie spice, 1/4 cup pureed pumpkin, 1/4 cup toasted pecans or walnuts.

Doube Chocolate Balls - Add 1/4 cup cocoa power, roll the balls in finely chopped dark chocolate.

White Chocolate Cranberry Balls - Use almond or cashew butter, honey, 1/4 cup dried cranberries, 1/4 cup Bake Believe white chocolate chips.

Oatmeal Raisin Balls - Use cashew or almond butter, maple syrup, 1/2 cup raisins, increase cinnamon to 2 teaspoons.
