Amazing Nut Bars

These are so good - full of healthy fats, protein and low sugar too! You can choose whatever nuts & seeds you like, add some chocolate chips, and dried fruit and they will be hard to keep around.

I have made these bars several times and this combination seems to be just perfect.


Ingredients.

  • 1 cup walnuts

  • 1 cup almonds

  • 1/2 cup flax meal

  • 1/2 cup hemp hearts

  • 1/4 cup pumpkin seeds

  • 1/2 cup Brazil nuts

  • 1 cup unsweetened shredded coconut

  • 1 cup nut butter [almond, cashew, peanut]

  • 1/2 cup coconut oil

  • 2 tbsp. honey [optional]

  • 1 tbsp. vanilla extract

  • 1 - 2 tsp. cinnamon

  • 2/3 cup dried fruit [golden or regular raisins, chopped apricots, cranberries]

  • 1/2 cup dark chocolate chips [I use Bake Believe, HU or Lily's dark chocolate chips]

  • 1/2 tsp. sea salt

Method.

  1. In a small saucepan over low heat melt: coconut oil, nut butter, honey [if using], and vanilla.

  2. Rough chop nuts and place in a large bowl

  3. Add flax meal, hemp hearts, coconut, cinnamon, dried fruit, chocolate chips and salt. - Mix well.

  4. Pour melted nut butter mixture over nuts and stir together.

  5. Place a sheet of parchment paper in a 9X9" square pan and pour nut mixture into pan.

  6. Press down firmly.

  7. Refrigerate until set - about 1 hour.

  8. Remove from fridge and cut into squares.

  9. Store in fridge or freezer.


Notes.

You can mix and match any nuts or seeds you enjoy.

If mixture is to dry, add more nut butter before pressing into pan.
