This is the pefect blend of aromatic, savory Greek flavors! You can use it to make these bowls, and also enjoy adding authentic Greek flavors to your favorite meatballs, burgers, roasted vegetables and marinades. The simple pantry basics are easy to find, and I'm sure you'll find many ways to include more Mediterranean flavors to your cooking.
Greek Seasoning Mix.
1 tbsp. Greek Oregano
1 tbsp. dried Basil
1 tbsp. Garlic Powder
2 tsp. dried Onion
2 tsp. dried Parsley
2 tsp. dried Dill
2 tsp. dried Marjoram
1 tsp. smoky Paprika
1 tsp. dried Thyme
2 tsp. ground Black Pepper
pinch of Cinnamon
Combine all ingredients together in a bowl, stir well.
Store in a jar.
'Medi' Bowls
Ingredients.
1 lb. lean ground beef [I like to use 85/15 or 90/10 for this recipe]
1 tsp. avocado oil
1 red onion, thinly sliced
3 cloves garlic, minced
1-2 zucchini, cut length-wise and into chunks
1 red bell pepper, sliced
1 cup cherry tomatoes, cut in half
1/4 cup kalamata olives, cut in half
1/2 cup feta cheese. crumbled [I look for authentic feta cheese blocks from Greece]
1/4 cup parsley, chopped
juice of 1 lemon
cauliflower rice, dry-fry in a saute pan until consistency of rice
Tahini Sauce & Pickled Onions [optional, but very yummy!]
Method.
Heat oil over medium-high healt in a cast iron pan.
Add onions and saute until soft, then add garlic to pan.
Add ground beef and 1 tbsp. Greek seasoning to pan and cook until beef is done [no pink remains].
Drain beef /onion mixture, if desired.
Reduce heat to medium and return meat to pan if you have drained the fat.
Add; zucchini, bell pepper, and tomatoes and continue cooking until vegetable are slightly soft.
Add juice of lemon to mixture.
Taste and adjust seasoning.
Crumble feta cheese and garnish with parsley.
Serve over cauliflower rice.
Drizzle with Tahini Sauce and add pickled onions too
Notes.
Swap ground beef for ground lamb.
Add drained artichoke hearts.
Serve meat over mixed greens instead of cauliflower rice.
Add chickpeas to beef mixture.
Top with a tangy Tzatziki sauce instead of Tahini sauce.
Include a simple cucumber, red onion and tomato salad.
