Breakfast Bites

Here's a tasty grab & go breakfast to make on repeat. Inspired by Starbucks, it's healthy, delicious, and easy to make.

This is one of the best breakfasts for those grab-and-go mornings! These bites keep well in the fridge for a couple of days and you can double the recipe and store them in the freezer too.

Packed with protein for an energizing beginning to your day.

To accomplish the velvety texture of the Starbucks egg bites, I use cottage cheese and bake them in a sheet pan filled with hot water - sous vide knock-off.

These bits are endlessly variable, so here's the basic recipe.


Ingredients.

  • 18 large eggs [6 for cottage cheese mixture, 12 to crack into muffin cup]

  • 1 cup whole milk cottage cheese [I love Good Culture]

  • 2 scoops unflavored protein powder [Equip Prime Protein]

  • 6 slices cooked bacon cut in half, or Canadian bacon

  • 2 cups hot water

Method.

Pre heat oven to 350 degrees.

Blend until smooth; 6 eggs, protein powder and cottage cheese in a blender.

Grease a 12 cup silicone muffin tin with avocado oil, ghee, or butter.

Place 1/2 slice cooked bacon in each muffin cup.

Evenly divide cottage cheese-egg mixture into muffin cups.

Crack 1 egg per cup on top of cottage cheese mixture.

Sprinkle with fresh cracked pepper and dust with smoky paprika.

Place egg cups on a sheet pan and pour hot water in pan.

Bake for 18-22 minutes, or until eggs are set.

Let cool in pan for 5 minutes before removing.

Notes.

I love this recipe as written, but feel free to experiment with veggies too. [About 1 tbsp. per cup works well.]

Try these ideas:

  • Sauteed kale, spinach,mushrooms or asparagus

  • Carmelized onions

  • Sprinkle of cheddar, feta or parmesean cheese on top before baking.
