Better Banana Bread

How about a delicious grain-free, no refined sugar banana bread that everyone will enjoy. The secret is Almond Butter which creates a texture so similar to banana bread made with regular flour without the gluten.


  • 2 bananas

  • 2 large eggs

  • 1/2 cup almond butter

  • 1/4 cup coconut or maple sugar

  • 1 tsp. vanilla extract

  • 1& 1/2 cups almond flour

  • 1/4 cup tapioca or cassava flour

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

  • 1 tsp. cinnamon

  • 1/2 cup chopped walnuts or pecans

  • 1/3 cup chocolate chips [I use Lily's or Bake Believe No Sugar Dark Chocolate chips]


  1. Preheat oven to 350 degrees.

  2. Line a 9"X5" loaf pan with parchment paper.

  3. In a large bowl, mash bananas well, add almond butter, eggs, coconut sugar and vanilla.

  4. In another bowl, combine almond and tapioca flours, baking soda, baking powder, salt and cinnamon.

  5. Add dry ingredients into the wet until just combined.

  6. Stir in nuts and chocolate chips reserving some to sprinkle on top of bread.

  7. Spread batter evenly into parchment-lined loaf pan and sprinkle with reserved chocolate and nuts.

  8. Bake in pre-heated oven for 45-50 minutes until toothpick inserted near center comes out nearly clean.

  9. Allow loaf to cool in pan for 15 minutes before removing and allowing to completely cool on rack.

  10. Slice bread when completely cool - so delicious!
