Almond Butter Truffle Bars

These bars are the perfect combination of creamy almond butter and chocolately deliciousness.

A Sweet Treat.
Sometimes, we want a treat and spend a lot of "eating" trying to find something sweet that won't send our blood sugar skyrocketing. These Truffle Bars hit all the right notes without the spike, because they contain a balanced amount of protein, fat and carbs. And as an added bonus, they're easy to make too!

Almond Butter Truffle Bars
Ingredients.
3 Bananas
1/2 cup Burroughs Family Farms almond butter [plus 2 tbsp for topping]
2 tbsp. maple syrup
1/4 cup cacao or cocoa powder
1/2 cup sugar-free dark chocolate chips [reserve some for top]
2 scoops Equip protein powder, unflavored

Method.
Preheat oven to 350F
Line an 8X8 baking dish with parchment paper or foil.
In a large bowl, mash bananas.
Stir in almond butter and maple syrup.
Add cacao powder and protein powder.
Mix well and transfer to baking dish, smoothing top.
Add dollops of almond butter to the top and use a toothpick to swirl around.
Sprinkle with chocolate chips.
Bake 18-22 minutes or until a toothpick comes out clean.
Allow to cool completely.
Refrigerate for 1-2 hours before cutting into bars..
Store bars in freezer for best truffle-like texture.
