Easy Asian Skillet Dinner

This is a delicious riff on egg rolls without the fuss and bother. With a pound of ground chicken, turkey or pork and a bag of colorful coleslaw mix, dinner is almost ready!



 

Ingredients.

  • 4 cloves garlic, minced

  • 6 green onions, thinly sliced [1/3 cup]

  • 1 -12 oz. bag rainbow coleslaw mix with red cabbage and carrots

  • 1 lb. ground chicken, turkey or pork

  • 1 tbsp. avocado oil

  • 3 tbsp. coconut aminos

  • 1 tsp. sesame oil

  • 1 tsp. grated ginger

  • 1/3 cup mayonnaise [primal kitchen or chosen brand]

  • 2 tsp. hot sauce

  • 1 tsp. sesame oil

  • 1 bag frozen Cauliflower "Rice"

Method.

  1. Heat oil in a large frying pan or wok over medium-high heat.

  2. Add ground meat, season with salt & pepper.

  3. Cook, breaking up the meat into small pieces with a wooden spoon. Cook 6 minutes.

  4. Move meat to the side of pan. Add green onions, garlic and ginger to pan and cook until fragrant- 30 seconds.

  5. Add coleslaw mix, sesame oil and coconut aminos. Cook stirring occasionally until vegetables are crisp-tender-about 3 minutes.

  6. In a small bowl, stir together mayo, sesame oil and hot sauce, set aside.

  7. In a large frying pan over medium heat, add cauliflower rice [can be thawed or frozen.]

  8. Cook cauliflower rice, stirring often until heated through and fully cooked.

To Serve:

  • Divide cauliflower rice into 4 bowls.

  • Add the stir-fry and drizzle with the spicy mayonnaise.

  • Enjoy.

Options to Try.

Add additional vegetables like sliced mushrooms, celery, bean sprouts, carrots or green beans.
