This is a delicious riff on egg rolls without the fuss and bother. With a pound of ground chicken, turkey or pork and a bag of colorful coleslaw mix, dinner is almost ready!
Ingredients.
4 cloves garlic, minced
6 green onions, thinly sliced [1/3 cup]
1 -12 oz. bag rainbow coleslaw mix with red cabbage and carrots
1 lb. ground chicken, turkey or pork
1 tbsp. avocado oil
3 tbsp. coconut aminos
1 tsp. sesame oil
1 tsp. grated ginger
1/3 cup mayonnaise [primal kitchen or chosen brand]
2 tsp. hot sauce
1 tsp. sesame oil
1 bag frozen Cauliflower "Rice"
Method.
Heat oil in a large frying pan or wok over medium-high heat.
Add ground meat, season with salt & pepper.
Cook, breaking up the meat into small pieces with a wooden spoon. Cook 6 minutes.
Move meat to the side of pan. Add green onions, garlic and ginger to pan and cook until fragrant- 30 seconds.
Add coleslaw mix, sesame oil and coconut aminos. Cook stirring occasionally until vegetables are crisp-tender-about 3 minutes.
In a small bowl, stir together mayo, sesame oil and hot sauce, set aside.
In a large frying pan over medium heat, add cauliflower rice [can be thawed or frozen.]
Cook cauliflower rice, stirring often until heated through and fully cooked.
To Serve:
Divide cauliflower rice into 4 bowls.
Add the stir-fry and drizzle with the spicy mayonnaise.

Add additional vegetables like sliced mushrooms, celery, bean sprouts, carrots or green beans.
