Almond Butter Grain-Free Granola

I absolutely love Purely Elizabeth's Almond Butter granola, but it's pricey and I thought I could make a copycat version that would satisfy my current obsession with this crunchy, delicious grain-free mix.



 

This Almond Butter Grain-Free Granola is a delightfully crunchy mixture of nuts, seeds, coconut and vanilla protein powder to boost the protein content. It's also refined sugar and grain- free.

I love to sprinkle it on chia pudding, yogurt, cottage cheese or top a smoothie for added crunch.

You can use any nuts or seeds in this mix, but I especially love almonds, cashews, pecans, pumpkin seeds, sunflower seeds, chia seeds and hemp seeds. The only thing you need to be concerned about is the actual ratio of wet to dry ingredients if you change the nuts and seed combination.


Almond Butter Grain Free Granola

Ingredients.

  • 1 cup almonds, roughly chopped

  • 1 cup cashews, roughly chopped

  • 1/2 cup pecans, roughly chopped

  • 1/2 cup sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1 cup coconut flakes

  • 2 tbsp. hemp seeds or hearts

  • 2 tbsp. chia seeds

  • 1 scoop Equip Prime Protein Powder- vanilla flavored

  • 1/4 cup almond butter

  • 1/4 cup coconut oil, melted

  • 1 tbsp. vanilla

  • 2 tsp. cinnamon

  • 1/2 tsp. kosher salt


Method.

  1. Preheat oven to 300 degrees. Line a large sheet pan with parchment paper.

  2. In a large bowl, mix together all nuts and seeds, coconut and protein powder.

  3. In a seperate bowl, mix together the melted coconut oil, almond butter, vanilla, cinnamon and salt.

  4. Combine wet ingredients with nut mixture making sure everything is well coated.

  5. Spread mixture evenly on sheet pan.

  6. Bake for 45-50 minutes, stirring granola several times.

  7. Remove from oven when golden brown, allow to cool completely before removing from pan.

  8. Store in a container in refrigerator.

prep. time - 15 minutes

cook time - 50 minutes

makes - 6 cups
